Apple la lai!

CRUST
Ingredients:
1-1/4 cups all purpose flour
1/2 tsp salt
1/2 tsp sugar
1 stick butter, cut into pieces
1/4 cup cold water

Instructions:
1. Combine flour, salt, sugar and butter in a bowl and mix together. Add in a bit of water at a time until the dough is easy to mash by hand.

2. Divide into two and place each into a sheet of plastic wrap. Form into disks, wrap and refrigerate for at least 1 hour before using.

FILLING
Ingredients:
3 apples, cut, cored and peeled (cut into small pieces)
1/4 cup sugar
1/2 tsp cinnamon
1/4 tsp salt
1/8 cup all purpose flour
2 tbsp butter, cut into pieces

Instructions:
1. Preheat oven to 450 degrees.
2. In a bowl, combine the cut up apples, sugar, cinnamon, salt and flour.
3. Prepare pie crust by unrolling one of the disks onto the pie plate till it covers the bottom and sides. Fill with the apple mixture, mounding slightly in the center. Dot with butter.
4. Cover with the second disk and seal on the sides. Cut about 5 or 6 slits on top. Sprinkle with some sugar if you like.
5. Bake for 20 minutes, reduce heat to 375 degrees and bake for another 30-45minutes. If the top or sides are browning too quickly, cover with aluminum foil.
6. Remove from the oven and cool completely before serving. Best enjoyed with vanilla ice cream on the side.

I just made this today!

My son enjoys eating apple pie from McDonalds, and I was worried that he’s eating too much processed or fast food, so I looked up recipes for making home made apple pie. I found this apple pie recipe from Martha Stewart’s website. It was easy to prepare, and I had the ingredients readily available. It was such a hit with the family, my husband wants to sell them for Christmas!

Lazy Lola Soup

Ingredients:
2cups chicken stock
1medium carrot, diced
1medium potato, diced
1stalk celery, chopped
patis

Instructions:
1. Put all ingredients in a saucepan and bring to a boil.
2. Add patis to taste.

*If you don’t have chicken stock, you can use chicken broth cubes. I only use half a cube as I don’t want too much MSG on our food.

When I don’t have any food ready for my toddler, I prepare this soup and add in some rice for a quick meal.

Baby Friendly Food

A fellow mom posted on one of my FB groups asking for help on her weekly menu, to encourage her 1-year-old to eat table food. That got me reviewing my weekly meal plans.

I usually cook one type of dish per day, like: Monday chicken, Tuesday pork, Wednesday beef, Thursday fish, Friday vegetables, Saturday pasta. We sometimes have leftovers and the food will just spill over to the next day, or we eat out on weekends, so I only think of 6 recipes per week. I also have to make sure I cook enough for two meals (lunch and dinner).

When preparing meals, I have to make sure that the dish will contain some ingredient that Jocef will eat, in case he does not like the meat. It’s either the sauce, the soup, or I have to have some carrots or potatoes.

Ginisang Toge

Ingredients:
300grams toge
100grams pork (ground, shreds or just cut up little bits)
2 cloves garlic, minced
1 medium onion, minced
salt and pepper to taste
1-2cups leftover chicken broth or water

Instructions:
1. Saute the garlic, onion and pork.
2. Put in the toge.
3. Put in the chicken broth or water to keep it from drying up.
4. Add salt and pepper to taste.

Guisadong Monggo

monggoIngredients:
1cup monggo beans
1medium sized onion
2-3cloves garlic
1medium sized tomato, diced
50-100grams pork (menudo cut, or cut smaller; optional)
2cups water
fish sauce and pepper to taste

Instructions:
1. Boil the monggo beans for about 30minutes (you’ll know it’s done when they crack). Set aside.
2. In a large pot, saute the onion, garlic and tomatoes. Add in the pork, fish sauce and pepper.
3. Add in the monggo beans (include the water left over).
4. Simmer for 8-10minutes.
5. Top with malunggay leaves.

Sarciadong Isda

Ingredients:
Fish (tilapia, dory fillet, whatever)
1medium sized onion, minced
2-3 cloves garlic, minced
2medium sized tomatoes, cubed
2cups water
fish sauce and pepper
spring onions

Instructions:
1. Rub salt all over the fish and fry. Set aside.
2. In a large pan, saute the garlic, onions and tomatoes.
3. Add water, fish sauce, pepper and spring onions.
4. Add the fried fish and simmer for about 5minutes.
5. Pour in the beaten eggs evenly into the pan. Wait a few minutes before stirring the mixture.
6. Simmer for 2-3 more minutes then serve.

I have tried this with fresh tilapia as well as dory fillets — I love the dory fillets! I hate taking out the fish bones, so I’m sticking with dory.

Sweet and Sour Fish

Ingredients:
Fish (tilapia, dory fillet, whatever)
1packet Knorr sweet and sour mix
1small packet Del Monte pineapple tidbits
1-2pcs red bell peppers
salt

Instructions:
1. Stir the sweet and sour mix in 4 cups of water, then boil in a small saucepan.
2. Rub salt all over the fish and fry in a large pan.
3. Pour in the sweet and sour mix, pineapple tidbits and bell peppers. Simmer for 5-7minutes.

*Do not include the pineapple juice or else it will be too sweet.

Arroz a la Cubana

Ingredients:
300grams ground beef
1medium sized potato, cut into small cubes
1medium sized carrot, cut into small cubes
1medium sized onion, minced
2-3cloves garlic, minced
1pack (250ml) tomato sauce
1small box of raisins (optional)
salt and pepper to taste
2-3 saging na saba, fried

Instructions:
1. Saute the onion and garlic, add in the ground beef. Stir until the meat changes color.
2. Pour in the tomato sauce, allow it to simmer about 7-10mins).
3. Add in the carrots. After 5minutes, add in the potato.
4. Simmer for 7more minutes. Add some raisins if you like. Add salt and pepper to taste.
5. Remove from heat and serve with fried saba.

Ground Meat Omelette

Ingredients:
300grams ground pork (or ground beef)
1medium sized potato, cut into small cubes
1medium sized onion, minced
2-3 cloves garlic, minced
1small box of raisins (optional)
2 eggs, beaten

Instructions:
1. Saute the onion and garlic, then add in the ground meat until it changes color.
2. Add in the potato, cook for about 7minutes (until potatoes are tender). Add some raisins if you like. Season with salt and pepper. Remove from heat.
3. In a bowl, beat one egg and add a few tablespoons of the cooked meat (just enough to get covered by the egg, or else it will be difficult to turn). Pour onto a frying pan and let it cook for about 3-5minutes. Flip and cook the other side.

Picadillo

Ingredients:
300grams ground pork
1medium sized potato, cut into small cubes
1medium sized carrot, cut into small cubes
1medium sized onion, minced
2-3cloves garlic, minced
1pack (250ml) tomato sauce
1small box of raisins (optional)
salt and pepper to taste
2-3 boiled eggs (a dozen quail eggs are ok too)

Instructions:
1. Saute the onion and garlic, add in the ground pork. Stir until the pork changes color.
2. Pour in the tomato sauce, allow it to simmer about 7-10mins).
3. Add in the carrots. After 5minutes, add in the potato.
4. Simmer for 7more minutes. Add some raisins if you like. Add salt and pepper to taste.
5. Remove from heat and serve with (whole) boiled eggs.
